Pelmeni: small parcels, a wide geography

The Pushkin Institute’s cultural dictionary connects pelmeni with the culinary traditions of the Urals and Siberia. Thin dough encloses a filling; they may be served with butter, sour cream or broth.

Ask about the filling and sauce if you avoid particular ingredients. The name alone does not identify the meat or possible allergens.

Our suggestion for a first tasting: start with a small, simply served portion, then compare another version. Family recipes need not agree on one definitive taste.
